Self-catering means genuine independence: eating when you want, cooking what you want, and spending your food budget at local markets rather than on restaurant margins. The kitchen at the gîte is equipped to professional standard for a holiday house: a large induction hob (4 zones), full-size oven, American fridge-freezer with ice maker, dishwasher, microwave, Nespresso machine (capsules provided for the first morning), and all the pots, pans, knives, chopping boards, mixing bowls and serving dishes needed to cook for 8.
The kitchen opens directly onto the stone courtyard where the large plancha BBQ (gas, with its own dedicated gas bottle included) is the centrepiece of summer evening cooking. The plancha suits everything from local lamb chops to whole sea bass, paella-style vegetables and the region's famous magret de canard. The outdoor dining table seats 10 comfortably — evening meals in the courtyard under the wisteria, with a bottle of Cabardès red, are the memory that guests most frequently mention in their reviews.
For those who want to combine self-catering with the occasional restaurant meal, we maintain a curated list of addresses within driving distance — avoiding the overpriced tourist restaurants inside Carcassonne's citadel. The best value in the area is the traditional plat du jour (lunch menu) at local village restaurants: typically two courses with wine for €14–16 per person, featuring seasonal local produce and genuine home cooking. We update this list each season.
Booking through Airbnb or Booking.com typically adds 12–18% in platform fees to the price you see — split between what the platform charges the guest (service fee) and what it deducts from the owner (commission). On a week-long stay at €155/night, that can add over €150 to your total cost. When you book directly on this site, you pay exactly what you see — no service fee, no hidden charges. The money goes directly to the owners.
Beyond cost, direct booking means direct communication: you deal with the owners personally, not a platform's customer service department. We respond to messages within a few hours, can answer specific questions about the house and area, provide personalised arrival instructions and adapt arrangements (check-in time, parking, luggage storage) to your travel plans. If there is ever an issue during your stay, you reach us directly — not a call centre in another country.
Our direct booking process is simple: check availability on this site, send your request, receive confirmation and a bank transfer link. We accept international bank transfers (IBAN, no fees) and can also arrange payment by card on request. A 30% deposit confirms the booking; the balance is due 30 days before arrival. Cancellation policy: full refund if cancelled more than 60 days before arrival; 50% refund between 30 and 60 days; no refund within 30 days. We recommend travel insurance for peace of mind.
The village bakery (200 metres from the gîte, open daily except Wednesday afternoon) bakes traditional sourdough loaves and croissants each morning — the smell reaches the courtyard by 8am. For main provisions, the most practical option on arrival day is a stop at the Carrefour Market in Carcassonne (on the road from the airport or motorway exit), which has an excellent wine section with well-priced Cabardès, Minervois and Corbières bottles from €5–8.
Markets not to miss: the Saturday morning market in Conques-sur-Orbiel (15 min) for local vegetables, cheese and charcuterie; the Tuesday and Saturday market in Carcassonne bastide for the full range of local produce; the Sunday market in Caunes-Minervois (30 min) in the beautiful main square — artisanal honey, saucisson and local wines. In July and August, a smaller market sets up in Mas-Cabardès itself on Sunday mornings.
For a special dinner out, Carcassonne's bastide (lower town) has several excellent restaurants serving cassoulet, duck confit and local fish — considerably better value than the Cité. The wine bars around Place Carnot are a good option for a relaxed evening. For a splurge, the Michelin-starred La Barbacane inside the citadel walls merits the occasion (advance booking essential in summer). Closer to the gîte, the village restaurant at Mas-Cabardès opens on Friday and Saturday evenings in season — ask us for current availability when you book.

Yes — please let us know your estimated arrival time when booking. We use a key safe with a code, so late arrivals (even after midnight) are no problem. Early departure is also easy: leave the key in the key safe, shut the gate. We just ask that you give us an approximate departure time the evening before so we can plan the cleaning schedule.
